Chicken Alfredo

I made this for John on our Very first ( and i thought it would be our last date ) :)
See i bought all the stuff and headed up to his house for the first time hanging out since we met. Well long story short all his buddys showed up! and i felt like a Frat mom so i left after dinner and Drove away and we didnt talk for a few weeks after that! And now here we are!
This is sooooo Rich soooo yummy and you can pick and choose what you would like to Throw in, I like a lot of Textures and a lot of different things but you sure dont have to it will be great no matter what!

2 bags REAL Parmagian Cheese
3 Small Containers of Heavy Whipping Cream
2 sticks Real Butter Cubed
2 tablespoons basil

2 box's Vermicelli noodles ( you can use fettechini or thing spaghtti any pasta will work)

4 Chicken Breast
1 Vidallia Onion Chopped
1 pkg. Fresh mushrooms SLiced
1 Green Pepper
1 Red pepper
15 cloves of Garlic peeled ( i love whole garlic cloves but you dont have to, you can also use the minced galric in your produce section in the jar 2 table spoons will be about the same)

Place Parm Cheese, Whipping Cream, 2 Sticks Butter, & Basil in a LARGE Bowl and set aside

Cube the Chicken and cook in olive oil and 2 tablespoons real butter until no longer pink in the middle, set aside

In a large skillet or wock place some olive oil and 1/2 stick real butter and sautee all the veggies until tender, do not cook on high heat as you will scorch the garlic. i add the Garlic about 1/2 way threw this will probly take about 20- 25 min

while that is cooking Cook your Noodles according to pakg. instructions

When the Pasta is done Drain and Immediatly dump on top of Whipping Cream Mixture and add all the Veggies ( dont Drain ) and chicken Mix all together, Cover with Saran wrap Sauce will be a little runny but let sit for 10- 15 min and it will thicken up and is amazing!

While this is sitting John and I Sautee 10 ( or so) Uncooked Shrimp in buffalo wing sauce and then serve on top of the Alredo... THIS IS NOT GOOD FOR YOU AT ALL! but i hope you try it and enjoy it!

Home Made Chicken Fingers

This is a cheap easy way to feed your family! I usually use 6 chicken breast for John and I BUT I have left overs so i get three meals out of this on Day 2 I put them in a Wrap and on day 3 in a salad, its easy if i am super busy!

6 chicken breast sliced into 1 inch peices
1 carton of Butter Milk
4 eggs
4 cups ( arpox ) of Flour
2 table spoons Montreal Steak Seasoning
Oil to fry ( canola or Vegetable oil)

Set up your Coating Station.
in a large bowl empty the carton of butter milk and add 4 eggs wisk together
in another large bowl add your flour and add seasoning, you can use more or less seasoning however you like. if you like a little spice add a few dashes of Tobasco into your egg mixture or a tablespoon of Cyenne Pepper to your Flour mixture, if you are me I DO BOTH! haha! I like spice!

ok So heat your oil on Med/ High Heat.
While this is warming up
soak the Chicken in the Egg/ buttermilk mix, one at a time letting the wet mix drip off first, add to the Flour mix once all the chicken is in the flour mix and coated reverse and shake off some of the loose flour and put back in the egg/ Milk mixture, then back in the flour. by the time you are done with this your Oil should be ready!

Fry in small batches until golden brown and no longer pink in the middle. may need to reduce heat

Serve with Honey mustard, Honey, Ketchup, or Mayo ( dont knock it till you try it!)

If you have left overs Try a Crispy Chicken Wrap with Baby Spinach on flat bread with red onion tomatoes and Dried cranberrys! YUM

easy corn casserole

This is also a stick to your bones good side dish that is great for any thing. I made it on Monday night with homemade chicken strips, ive made it with a ham, Turkey, Grilled Steaks and Shrimp its soooo versitile that you can make this with almost anything! I myself could just have this as a meal its sooooo good!

2 boxs Jiffy Corn Muffin Mix
2 Cans Cream Corn
2 Cans whole Kernal Corn ( DRAIN )
1 ( 16 oz) sour cream
1 stick REAL butter

Mix everything but the butter together, an put in a greased 9 by 13 cake pan cube butter and place on the top, cover with foil in a 350 degree oven for 45 min and uncover for 10 min... ENJOY!

Family Favorite

This is a staple at our thanksgiving its an easy go to you can make it the night before and then it just takes an hour in a 350 degree oven. the more you can do a head of time the more time you have to spend with your family!

California Blend Cheesey Vegetables

2 Bags Frozen California Blend Veggies
1 Big Can of Cream of Mushroom Soup
2 Jars Cheese Wiz
1 Jar Pearl Onions
1 Can Sliced Water Chestnuts( John loves them so we use 2 cans!)
3 cups cooked white rice
1 sleeve Ritz crackers crushed ( we use wheat ritz)

Cook your veggies in boiling water. Drain
In a large bowl add all ingreidents together and mix

grease a 9 * 13 cake pan and add your veggie mix
cover with Tin Foil and bake in a 350 degree oven for 45 min until bubbly uncover and sprinkle crackers on the top bake another 10 min. I cover with a clean dish cloth after it comes out of the oven for about 5 min to let it set up.

I just made this the other night and theres still some in the fridge, i cant wait to get home haha
